Huon Hooke
("Nicolas") Deepish purple-red, youthful colour. Nutty, blueberry and sappy aromas, very fragrant, but still nascent and only starting to build layers of complexity. Very taut, refined, medium-bodied, but intense flavour and elegance, acid is a trifle shrill, a delicate wine and perhaps lacks the power and sheer guts I expected of an '07. Still, a delightful wine with good flavour, line and length.

93 Points Robert Parker
Very deep garnet-purple in color, the 2007 “Nicolas” Cabernet Sauvignon has moderately pronounced notes of freshly crushed black currant and blackberry with some black pepper and bay leaf plus hints of graphite and cedar. Crisp acid cuts through the ripe, concentrated yet medium bodied fruit, supported by medium-firm, fine grained tannins, and finishing long and savory with a slight mint and cloves lift. Drink this one now to 2020+.
