Stuart Knox
Opaque core fading into a deep honey-golden rim. It clings to the glass, staining it for ages. A savoury and deep nose, burnt caramel, celery leaf, aged soy and bitter chocolate all in abundance. Thick and oily on the tongue, it layers dark chocolate with raisins, dried peel and dark soy umami characters. The balance though is incredible, with the texture and richness it still flows seamlessly and never loses focus at all. Some nutty rancio hints show later as it lingers for eternity on the palate.
